last place super skinny white bean chicken chili

1 tbsp olive oil

1 medium onion, diced

1 jalapeno, seeded and diced

4 cloves garlic, minced

1/2 rotisserie chicken, cooked and shredded

1 tsp ground cumin

2 tsp ground oregano

2 cans cannellini beans, divided

3 1/2 cups chicken broth, divided

cheddar cheese

fresh cilantro

turn crock pot on low and set aside.

heat oil on medium high heat, add onion, jalapeno, and garlic and cook for 5 minutes, stirring occasionally. add in chicken, cumin and oregano and stir. add salt and pepper to taste and stir. pour into crock pot.

in blender add 1 cup of beans and 1/2 cup of broth. pulse until beans are smashed. pour into crock pot and add remaining beans and broth. mix and set aside on low for 3 – 4 hours.

top with cheese and cilantro.
