skinny bitch veggie smothered chicken

4 boneless skinless chicken breast

5 cloves of garlic

1 cup fresh basil

1 tbsp olive oil

1 tsp balsamic vinegar

1/4 cup water

1 cup sliced mushrooms

1 pint cherry tomatoes, sliced in half

1/2 red onion,thinly sliced

preheat oven to 375 degrees. pierce chicken breast with fork and brown on stove top.

in the meantime, place garlic, basil, oil, vinegar, and water in blender and pulse until puree.

place chicken in 9×9 dish and pour puree marinade over top of chicken. top with mushrooms, tomatoes, and onion. drizzle additional vinegar over top and top with basil, if desired.

bake for 40 minutes. let cool for a minute or two and serve. you’re welcome!
