parmesan honey pork roast

(adapted from six sisters. six sisters? that’s a lot of chicks!)

1 (2-3 lb) boneless pork roast

2/3 cup grated parmesan cheese

1/2 cup honey

3 tbsp teriyaki sauce

3 tbsp dried basil

1 tbsp italian seasoning

2 tbsp minced garlic

2 tbsp olive oil

1/2 tsp salt

2 tbsp corn starch

1/4 cup cold water

spray crock pot with non-stick cooking spray. in a small bowl combine parmesan cheese, honey, teriyaki sauce, basil, italian seasoning, garlic, oil and salt; and mix. place pork roast in crock pot and cover with sauce.  cover and cook on low for 6-7 hours or until a meat thermometer reads 160 degrees.

remove meat to a serving plate and keep warm. skim fat from cooking  juices, about 1/2 cup and transfer to a small saucepan. bring liquid to a boil and add cornstarch and water until smooth, stirring gradually. bring back to a boil and continue to cook and stir for 2 minutes or until thickened.

slice roast and top with gravy.
