mint brownies

mrs. gallup’s mint brownies

what you’re going to need:

2 sticks butter

4 squares semi-sweet baking chocolate

4 eggs

2 cups sugar

1 tsp vanilla

1 cup flour

what you’re going to do:

heat oven to 350. Spray flour non stick spray in 9 x 13 pan. melt butter and chocolate overmedium heat.

meanwhile beat together eggs, sugar, and vanilla in mixer.

once mixed add butter mixture.

Blend in flour.

pour into greased 9 x 13

bake for 30 minutes and wha-la! let cool completely before frosting.

2 tbsp butter, softened

2 cups powdered sugar

3 tbsp milk (could take up to 4 tbsp)

1 tsp peppermint extract

green food coloring

cream sugar, butter, milk, and peppermint together.

mix in food coloring (i make a pale green, but go crazy and make it however dark you want). wait until brownies are completely cooled until you put icing on. spread on brownies evenly and refrigerate for 20 minutes.

2 squares semi-sweet baking chocolate

2 tbsp butter

melt chocolate and butter together. spread on top of iced brownies. glaze will spread quickly before it starts to harden. helps to tip pan from side to side and work the chocolate longways. chocolate will probably not cover the entire top of brownies.

i cut the brownies into bite size squares so they are easy to eat and people don’t have to worry about cutting. in between cuts rinse knife in warm water to remove excess from knife.
