medi (mediterranean) couscous summer salad

1 1/3 cup israeli couscous

7 tbsp olive oil, divided

1 3/4 cup boiling water

2 tbsp distilled vinegar

1 cup grape tomatoes, cut in half

1/2 cup cucumbers, chopped

1/4 cup fresh basil, chopped

salt and pepper

crumbled feta

place couscous and 1 tbsp oil in saucepan on medium heat for 5 min. add boiling water and stir, reduce heat to medium/low and cover, continue to cook for 12 minutes.

combine remaining oil, 6 tbsp, oil, tomatoes, cucumber and basil and mix. add more oil if needed and salt and pepper. place in refrigerator for at least 2 hours so flavors come together. serve cold top with crumbled feta.

i think this is just the beginning of my summer salad obsession!
