coconut banana bread

1/2 cup vegetable oil

1 cup granulated sugar

2 eggs

1 tsp vanilla extract

1 tsp almond extract

2 1/2 cups self rising flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

3 medium overripe bananas, mashed (about 1 cup)

1 cup light coconut milk

1 cup sweetened shredded coconut

preheat oven to 350 degrees and grease (2) 9 x 5 loaf pans.

in mixer combine oil and sugar and mix on low. add eggs one at a time, mixing in between. mix in vanilla and almond extracts.

in separate bowl combine flour, baking powder, baking soda, and salt and mix.  in another bowl add mashed bananas and coconut milk.

alternating between the dry mixture and the banana mixture, add to oil and sugar mixture, starting and ending with dry mix. mixed until just combined, then stir in shredded coconut.

pour batter into pans evenly. *if adding chocolate chips, add 1/2 cup to half the batter*. bake for 45 minutes – 1 hour.

let for bread cool for 10 minutes and remove from pan and transfer to wire cooling racks.
