baked buffalo chicken pasta

baked buffalo chicken pasta *idea from how sweet it is

1 lb pasta (i used whole wheat elbows)

3 boneless, skinless chicken breasts, cooked and cut into chunks

1 tbsp butter

1 tbsp flour

1 1/2 cups milk

4 oz freshly grated monterey jack cheese

2 cup freshly grated cheddar cheese, divided

1/3 cup frank’s red hot wing sauce

1/3 cup panko bread crumbs

salt and pepper to taste

preheat oven to 375 degrees. cook pasta according to directions on package.

while pasta is cooking, heat a medium saucepan over medium heat. add the butter and melt until bubbly then add flour. this is now your roux, cook for 1-2 minutes until mixture is golden brown. add milk, stir and turn down heat to low. continue to stir until milk thickens. add in jack cheese and 1/2 cup cheddar cheese and continue to stir until mixture is smooth. stir in buffalo wing sauce. add salt and pepper to taste.

spray a 9 x 13 baking dish with non-stick spray. add pasta chicken, then pour cheese sauce over and mix throughly until everything is coated. sprinkle with remaining cheddar cheese and bread crumbs. bake for 25 minutes or until cheese is golden brown. remove from oven, drizzle with buffalo wing sauce and serve!
