happy national homemade cookie day

yeah, that’s really a day. and it’s today!national homemade cookie day

do we really need an excuse to eat a cookie? nope. but did i need an excuse to make them? yep!

i told you how all summer i fell into a rut of making things i’ve made over and over so i had nothing to share with you people. well when i was reminded yesterday that today is national homemade cookie day i asked what kind of cookie the informer wanted. she gave me 3 options, chocolate, peanut or snickerdoodle. well i don’t have cream of tartar which pretty much any snickerdoodle recipe calls for. i have 4 jars of peanut butter but am not willing to part with any of them, or even worse, use natural peanut butter in a cookie. i love natural peanut butter, but for some reason it just doesn’t seem right to cook with. i do however, love me some chocolate cookies!so much chocolate

it’s nice to  break up the chocolate chip cookie i would have typically made, because you know, i have the best chocolate chip cookie recipe ever! well i hate to break it to you but i have the best chocolate chocolate chocolate cookie recipe, ever. i guess i could just call it a triple chocolate cookie, but it’s more fun to make people say chocolate three times! i’m annoying, i know! as some of you may remember, last november i lost a very important cookie bake off with my best chocolate chip cookie recipe ever. so i have slightly modified this recipe to reflect the feelings of those judges, that cold cold lonely november night. i added, salt. you’re welcome men of the world.

these kind of needed that savory touch though, chocolate 3x is a lot. the salt gives it that nice savory element to cut through all of that chocolate. maybe if my complex has that goddamn cookie bake off again i will be able to slip the savory in. probably not though, this year it will have an all female judges panel. uh, i can’t win. mmm so fudgey

chocolate chocolate chocolate cookie, with salt

2 1/2 cups all purpose flour

1 tsp baking soda

1/2 tsp salt

2 cups light brown sugar

1 cup butter, room temperature

1 tsp vanilla

2/3 cup unsweetened cocoa

3 eggs

1 cup chocolate chips, melted

3/4 cups chocolate chips

coarse salt

heat oven to 350 degrees. mix flour, baking soda, salt and set aside.

mix brown sugar, butter, vanilla, and cocoa. add eggs one at a time. once mixed add melted chocolate chips.

slowly add flour mixture. once mixed add chocolate chips.

drop 1 1/2 inch balls on pan and top with coarse salt. bake for 10-12 minutes.

makes 4 – 5 dozen

i’m lactose intolerant and i still want a glass of milk after those.
