what’s worse than a monday?chicken boobs

a rainy monday! gosh dang, this is like the 5th monday in a row it’s been raining. it’s so hard to wake up on mondays already and when its a rainy monday i do everything  to try and avoid getting out of bed. my bed is so warm and comfy and like my favorite place!!

i had every intention on giving you this great recipe for a baked good today. it was going to be great and you all were going to drop what you were doing and go bake it. well it was a big fat fail. as in i can’t even show you the pictures and thank goodness you couldn’t taste it, you would have barfed. instead you’re going to hear all about a wonderful delicious meal i made you all this weekend.so fresh and so clean

want some breaking news? like huge breaking news? and i know how to break news people, i work for the media! okay well now that i hype it up that much, i’m realizing it’s not that big. well actually it is to me.  y’all i’ve been to the grocery store three weeks in a row. back to what we were talking about… while you all were out partying and drinking your faces off, you know what i was doing? making dinner. yep just living the life of a 27 year old sitting a home, watching tv and making dinner. recently i’ve felt like a soccer mom trapped in a 27 year old’s body. i got another one of those soccer mom meals for you!thai basil & garlic chicken

my mom gave me one of those daily tear off calendars, and it had a different recipe everyday. well i finally got around to making one of those and it was to. die. who would have thought? really this is another one of those, why-didn’t-i-think-of-that meals. so easy and i’m willing to bet you have all of the ingredients in your fridge already! make sure you have all these ingredients and then take the kids to swim practice and make them this for dinner. those little nuggets are going to love it too.

lame 27 year old thai garlic and basil chicken

2 tbsp vegetable oil

2 tbsp garlic, minced

1 large red onion, cut into 1-inch strips

1 red bell pepper, cut into 1-inch strips

1/2 tsp red pepper flakes

2 boneless chicken breats, cut into 1-inch pieces

7 tbsp soy sauce

1 tbsp sugar

1 1/2 c fresh basil leaves, chopped

1/3 cup cold water

1 tbsp cornstarch

heat oil in large nonstick skillet over med-high heat. add garlic, onion and pepper and toss for 2 minutes. add red pepper flakes and stir in. add chicken and saute, stirring frequently until it starts to brown on all sides but is not cooked through about 3-5 minutes.

whisk together the soy sauce and sugar and add to skillet. cook, uncovered, tossing occasionally until chicken is just cooked through about 2-3 more minutes.  whisk together the cold water and cornstarch and stir into pan until thickened. stir in fresh basil and toss well. remove from heat and cover until ready to serve to meld the flavors. serve over rice.

serves: 4another chicken dinner!

now turn on the bachelorette, things are about to get real when homeboy’s girlfriend makes an appearance!! oh snap. come on drew!!

    Wow Courtney! Long time reader, first time poster. This looked so good, but mine didn’t turn out so well (sad face). I think I over cooked the peppers (is that possible?) and my sauce was a little too tangy… Anyways turn that frown upside down, can’t wait until the next post!
