here we go again

me: “so i entered a chili cook off!”

that’s the type of support i get. i like him right? i think that question is still up in the air.

my office had a chili cook off, and you know that i want to redeem myself  from the not-so-amateur cookie bake off in november, so i entered.  i asked my distinct panel of critic (yes, i only have one, but he’s super critical, so he counts for like 100) if i should go safe and make regular ole chili. OR do the unexpected, and do a white bean chicken chili. he said, regular ole chili. i said, white bean chili! onions & japs

back story: i’ve only made chili once, and it was lackluster. it was a standard 90 bean turkey chili. it was fine, but it tasted like, well, chili. nothing exciting about, plus the color of chili? mer.

the judges: the whole office staff. largely older male dominated, with a sprinkling of younger girls. and about half the staff is competing in our office biggest loser competition. chili innerds

my competition ended up being 5 regular ole chilies. one was thrown out, it was labeled “juanita’s chili” which ended up being wendy’ chilis, what?! the other 4 were pretty simple, there was a cinny chili served on pasta, a 3 bean chili, a zucchini chili,  and a standard turkey chili. i thought my “skinny” chili would be a shoe in since everyone is doing this biggest loser competition.

the short of the story, i lost. and i just didn’t lose, like i lost bad. like i only had 1 vote bad. after people found out it was mine, they came up and said” it was really good, but it just wasn’t traditional chili.” since when have i done anything traditional? have you seen my spam and cheese? coconut banana bread? or buffalo mac’n cheese?!?! ugh, i am never going to win a food competition!!! the compeition

so maybe it didn’t win the chili cook off, but it was damn good. it you had tried it, you would have loved it. i know you would have.

last place super skinny white bean chicken chili

1 tbsp olive oil

1 medium onion, diced

1 jalapeno, seeded and diced

4 cloves garlic, minced

1/2 rotisserie chicken, cooked and shredded

1 tsp ground cumin

2 tsp ground oregano

2 cans cannellini beans, divided

3 1/2 cups chicken broth, divided

cheddar cheese

fresh cilantro

turn crock pot on low and set aside.

heat oil on medium high heat, add onion, jalapeno, and garlic and cook for 5 minutes, stirring occasionally. add in chicken, cumin and oregano and stir. add salt and pepper to taste and stir. pour into crock pot.

in blender add 1 cup of beans and 1/2 cup of broth. pulse until beans are smashed. pour into crock pot and add remaining beans and broth. mix and set aside on low for 3 – 4 hours.

top with cheese and cilantro.
