girl scout cookie follow up

i got my 2 7 boxes of girl scout cookies 2 weeks ago.

it took me a week to open them. much like pringle’s, once you pop, you really just can’t stop. so after i ate 2 of those boxes sitting on my floor watching tv (remember i still don’t have a couch) i decided that something needed to be done about this.

lucky for one of my soccer teams, this week was our last game of the season so i thought i would push share my cookies with them! they ended up with cupcakes topped with girl scout cookies! how lucky are they?

speaking of which, i live 3 miles from one of the most popular cupcake “stores,” georgetown cupcake. i get it, they use to deliver their cupcakes to my old office every time they had new seasonal flavors, and their cupcakes are damn good. but i passed by their place this week and the line is just stupid. people wait in line for HOURS to buy a $4.00 cupcake. what am i doing wrong in my life?!?!

so who wants to be an investor so i can start my own cupcake joint? do you think mine are worthy? if they look good to you, you should try them!

mmmm, peanut butter icing and tagalongs in my mouth!!!

tagalong cupcakes

1 box devils food cake mix (you really can’t be surprised still that i use cake mix)

3/4 cup creamy peanut butter

3/4 cup butter, room temp

1 1/4 cup powdered sugar

1/2 tsp salt (if you don’t use salted butter)

1 box tagalong girl scout cookies

prepare cupcakes according to package.

beat peanut butter and butter on low until creamy using a mixer.

add sugar and salt and beat on low until combined. increase speed to medium and beat for about 4 minutes until it is light and super fluffy.

top cupcakes with icing. break cookie into two pieces and place onto of icing.
