tailgating times

i’ve been to 4 football games the past four weekends. that’s a lot.

luckily i’ve been with people who aren’t like super into tailgating. those people who have a grill on their hitch, and a tv in their trunk, and a buffet with baked beans, corn dogs, ham rolls, and buffalo dip, who are they? and how much do they pay their girlfriend/wives to burn 10 weekends a year to do that?

i don’t know about you, but i like to enjoy my saturdays and not slave away making food for my boyfriend/husband and their friends for the next day. when would i ever find time to go to the outlet mall?

so i’m thankful when my girlfriend says “i’ll get a bucket of fried chicken and you bring some sides?” done. i’ve never been one to turn down fried chicken and you know i can make some sides. no grill, no problem! some of the sides, caprese skewers, pasta salad, and cookies the size of people’s faces!!

last weekend i did a cornbread and boy does it kick the jiffy box in the hiney! so sweet and moist and doesn’t leave that horrid cardboard taste and weird taste on the roof of your mouth. where does that even come from?!

you’re so sweet, sweet cornbread

1/2 cup yellow cornmeal

1 1/2 cups flour

2/3 cup sugar

1 tbsp baking powder

1/2 tsp salt

1/3 cup veggie oil

3 tbsp melted butter

1 tbsp honey

2 eggs, beat

1 1/2 cup milk

preheat oven to 350 degrees. grease 8 x 8 dish.

in a bowl medium bowl mix cornmeal, flour, sugar, baking powder, and salt. add oil, butter, honey, eggs, and milk. mix until most lumps are gone.

pour into greased dish and bake for 35 minutes. remove, cover with foil, and continue baking for 5-10 minutes, or until inserted toothpick comes out clean.

let cool for 10 minutes before serving.
