its not over till the fat lady, runs?!

its not over yet kids. we still have time to sips on margs, heat up the grill, and let ice cream dip down our hands. summer is still here. i was depressed about it last week but i snapped out of it!

speaking of last week… i started a new job (a couple weeks back) and met some new faces and it trickled out that i have a blog. how come whenever i tell someone i have a blog they look at me like i should be on prozac or something? i think people use to have blogs to complain and whine about life, not anymore. all the blogs i read are people like me, we like to eat, we like to bake, and we’re all a little crazy. but the one thing you won’t find here, me walking off the ledge. (forget that whole period when i complained about bachelor ben)

okay, glad i got that off my chest. now, i was telling you about how summer is still here, because its still warm and i’m just not good and ready for it to be over.

want to get another good grillin recipe? how about one that doesn’t involve beef. no no no come back, i promise it’s good!

if you haven’t grilled pizza dough on the grill, you. are. not. living.

grilled chicken grilled pizza

1 cup fresh basil leaves

2 tbsp olive oil

2 tbsp vinegar

1/4 tsp salt

1/4 tsp pepper

1/3 cup water

2 chicken breast

1 uncooked pizza dough ball

2 tbsp olive oil

1 cup pizza sauce

2 cups mozzarella cheese

3 tbsp fresh basil leaves, chopped

place first 6 ingredients in mini food processor (or blender) and pulse until mixed. place chicken in glass dish and cover with mixture. turn on grill.

while grill is heating up separate dough into 2 balls. roll out on floured surface until dough is 1/2 thick.

place marinated chicken on medium high grill and cook for 7-8 min on each side. once cooked cut into bite-size pieces.

clean grill. brush both pieces of flat dough with olive oil, place oiled sides down on grill and brush top with oil. close grill and heat for 2-3 minutes. open grill and flip doughs. working quickly brush dough with pizza sauce and cover with mozzarella. close grill and cook for 2 minutes. open grill and cover pizza with chicken, continue to cook for 1 minute.

remove pizza from grill and cover with basil. eat!

be prepared to fall in love with grilled pizza and never go back to buy frozen pizza and or putting dough in the oven.
