the olympics of breads

i love to tell you all about my single life because i would like to think you care. even though you all probably found my blog because of the recipes not my loser loner single life, i feel like i need to take just 1 teenie tiny minute to talk about ryan lochte.

ugh, so hot! i keep staying up until midnight every night just so i can see his sexy self in those tight swim speedo short things!!! then i crawl into bed and hope i’ll dream about him every night, and i do! love you ry!

ok, had to get that out. had to tell someone besides my family who already knows! cheers to being single and not feeling guilty about dreaming about him (right A? i know you love him too!)

now back to the whole recipe/food portion of domesticourted!! i told y’all i smashed some fruit. see?!

think about this, bananas. coconut. chocolate. still with me? add some crack coconut milk and need i say more?

i love banana bread why not throw some shredded coconut and coconut milk in?!?! and you know i’m going to put chocolate chips in one of the loaves, it’s kind of my thing!

i could have done without the shredded coconut, but that’s just me. you on the other hand, you should put the shredded coconut in!

in other bread baking news, mama domesticourted got real into pinterest (like crazy into pinterest) and blogging last week and went bananas (all puns intended) in the kitchen. i don’t have any pictures of it but you have to make this zucchini bread she found on pinterest and made it. it is seriously the best zucchini bread ever. like i ate a whole loaf in 2 days best zucchini bread!!!

banana + coconut + chocolate chips bread (from fat girl trapped in a skinny body)

1/2 cup vegetable oil
1 cup granulated sugar
2 eggs
1 tsp vanilla extract
1 tsp almond extract
2 1/2 cups self rising flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 medium overripe bananas, mashed (about 1 cup)
1 cup light coconut milk
1 cup sweetened shredded coconut

preheat oven to 350 degrees and grease (2) 9 x 5 loaf pans.

in mixer combine oil and sugar and mix on low. add eggs one at a time, mixing in between. mix in vanilla and almond extracts.

in separate bowl combine flour, baking powder, baking soda, and salt and mix.  in another bowl add mashed bananas and coconut milk.

alternating between the dry mixture and the banana mixture, add to oil and sugar mixture, starting and ending with dry mix. mixed until just combined, then stir in shredded coconut.

pour batter into pans evenly. *if adding chocolate chips, add 1/2 cup to half the batter*. bake for 45 minutes – 1 hour.

let for bread cool for 10 minutes and remove from pan and transfer to wire cooling racks.

now go make the zucchini bread too! and then run 10 miles because you ate 4 loaves of bread!!
