cinnamon bun…popcorn?

say what?

you heard right, cinnamon bun popcorn people!

this boy at work brought in this over-the-top amaze popcorn from popcornopolis last week and we all went nuts over it. i love caramel corn, but this was like crunchier and well, just delicious! me being the little baking brat i am said “oh i can totally make that” *gulp*. that being said, last weekend was spent trying to perfect this cinnamon popcorn.

well chicks and dudes, long story short i think i came pretty close! we didn’t have the original to compare it to but the testers said it was pretty close.

i love popcorn, sweet, salty, the more butter the better! but i’ve only ever made popcorn in the microwave because again, the whole butter thing is such a turn on! for this particular popcorn i didn’t think butter was going to be better (only in this situation, otherwise, i’m all butter) so i had to learn how to pop it on the stove. yikes! good thing the roomie was gone this weekend, because she would have killed me. even days later out apartment still smells like burnt popcorn.

good thing popcorn kernels are super cheap, because it took me about a whole bag to perfect this whole “natural” popcorn thing. once i figured out how to actually make it on the stove, oh. my. god! you can do whatever you want to it, and it’s only like 100 calories for 4 cups of popcorn!!!

i put garlic powder on it, chili powder, cayenne pepper, parmesan cheese, old bay (not all of these things at once people, relax) anything i could find in the cabinet! so good! i don’t know if i can fully say it now, but i might be over microwave popcorn. for now.

the key to delicious real popcorn, scrap the veggie oil, and use coconut oil. the popcorn that was made using coconut oil had a different taste and was so much better than the veggie oil popcorn.

cinnamon bun popcorn

12 cups popcorn, popped in coconut oil

1 cup brown sugar

3/4 tsp cinnamon

1 stick unsalted butter, cubed

1/4 light corn syrup

1 tsp vanilla

1/2 tsp baking soda

preheat oven to 250 degrees. line baking sheeting with aluminum foil.

place popcorn in super large bowl and set aside. in large microwave safe bowl mix brown sugar and cinnamon.  add butter and drizzle corn syrup over mixture. microwave for 30 second, remove and stir. place in microwave for another 2 minutes. remove, stir and place in microwave for additional 2 minutes.

working quickly, add vanilla, stir (will start bubbling) and then add baking soda and stir until light brown. do not over mix. pour mixture over popcorn and mix to cover popcorn.

place in oven and cook for 30 – 35 minutes, taking out to stir every 10 minutes. remove from oven and place on wax paper, let cool for 10 minutes.

eat it! try not to eat it all, save some for the kids!
