comfort muffins

you know what i had to do today?

take a sick day. what’s worse than a cold in the winter? a summer cold! they are so weird, you’re sweating because it’s so rainy and muggy outside and because your nose is dripping down your face. ugh, go away summer cold. you better be gone before memorial day weekend!

good thing i had these little muffins to comfort me while i was feeling so icky. do you love muffins? do you love nutella? you will love these!!!

nutella cutesy muffins (from usmasala)

1 3/4 cup all purpose flour

1 1/2 tsp baking powder

1/2 tsp salt

1/2 tsp cinnamon

1/3 cup oil

3/4 cup sugar

1 egg

3/4 cup milk

1 tsp vanilla extract



3-4 tbsp butter

1/3 cup sugar

1 tsp ground cinnamon

what to do:

preheat oven to 350 degrees, grease mini muffin pan with non-stick spray.

combine flour, baking powder, salt and cinnamon in medium bowl. combine oil, sugar, egg, milk, and vanilla and mix well. add dry ingredients and mix untilcombined.

fill each muffin mold with batter almost half way. add a tsp of nutella to each mold. cover nutella filled molds with muffin batter until each mold is 3/4 full.

bake in oven for 18-20 minutes.

while muffins are baking, melt butter. combine cinnamon and sugar and set aside.

remove muffins from oven and place on cooling rack. once muffins are cool enough to touch dip top of muffin in butter and then dip top in cinnamon sugar.

let cool for about 10 minutes and then eat! they are best warm!

is my cold gone? no. but at least these muffins made me feel a little better!
