a whole new world

ariel may have found hers under the sea but i found mine on the world wide web… pinterest. i don’t know much about it or who created it, but they were a genius. who doesn’t want a cork board that they can open on their phone, computer, ipad, whatever. i wish i had thought of this.

within the first 5 minutes i knew i had found love. i already have about 50 things i want to bake/cook/craft/travel to/design, i mean the possibilities of this thing are endless. i found these little pieces of pretzel heaven and had to do it as soon as i got home from work.

peanut butter stuffed pretzels dipped in chocolate

1 cup creamy peanut butter

2 tbsp butter, softened

1/2 cup brown sugar

3/4 cup powdered sugar

1 bag mini pretzels (or enough for 50 sandwiches)

1 bag semi-sweet chocolate chips

mix peanut butter and butter together until creamy.  add sugars and mix until you can pick up dough and roll in hands without dough sticking to you. you may need to add more brown and powdered sugar.

using a tsp scoop form balls and place on pretzel and then top with another pretzel. ** i only have a tbsp scoop and those balls are too big, so using my scoop i just divided the ball into two and rolled two balls out of 1 tbsp scoop **

lay finished pretzel sandwich on wax paper covered tray. once all peanut butter filling is gone place finished sandwiches in freezer for an hr.

melt chocolate in double boiler (or in microwave on 30 sec intervals) and dip one side end of pretzel in chocolate. return to wax paper. once all are finished place in freezer again, at least 1 hr. keep in refrigerator or freeze until ready to serve.
