i mean, i try not to. there was this one time. oh wait and this other time. but besides those two times i haven’t. you know what. i probably have, but not this week! i promised you that i did something great with the meat that i used on monday night. well folks, throwback thursday did not disappoint this week. i give you… meatloaf.
wait. stop. come back! i know there are A LOT of meatloaf haters out there. i literally didn’t get all the words out of my mouth before a certain someone gave me a face like he was going to throw up. grow up. so it may not be the most appetizing thing to look at and if you stop and think about it it’s kind of like hot dogs, you just don’t think about it. but i really love the way it taste!
i used ground turkey, so as you’ll see i kind of made a pinkish meatloaf. gosh, the more i talk about it, the more i feel like i’m losing you.
BAM! not the only lover of meatloaf. there’s also sean and my dad! and the second best way to eat meatloaf, open face sandwee!! lastly, those green beans on monday, bad idea. like real bad idea. they were definitely bad.
come on give it a shot meatloaf (adapted from better homes & gardens cook book)
2 eggs, beaten
3/4 cup milk
2/3 cup dry bread crumbs
1/4 cup finely chopped onion
1 tsp salt
1/2 tsp basil
1/2 tsp parsley
1/8 tsp black pepper
1 1/2 lbs ground turkey
1/4 cup ketchup
2 tbsp packed brown sugar
1 tsp dry mustard
preheat oven to 350 degrees. in a medium bowl combine eggs, milk, bread crumbs, onion, salt, basil, parsley, pepper, and meat, mix well. place mixture in 8×5 loaf and spread evenly.
bake for 1 hr or until meat feels firm. meanwhile, in a small bowl combine ketchup, sugar and mustard and mix. spread on top of meat and return to oven for 10 min. let stand for 10 min before serving.
