if you got picked to be one of the chicks on the bachelor you would starve yourself for the months before taping right? most of these girls are skinny minnies but there are other ones who’s i’m thinking, ew, you knew cameras were going to be following you around everywhere, put the potato chip down. this all coming from the girl who has had a hamburger and sweet potato fries 2 days in a row! oh yeah! in my defense, one of them was a turkey burger!
do you love the fact that every episode of the bachelor starts with sean and his shirt off? uh yeah, i do! and for that, i give you, stud muffins! and if you get chosen to be on the chicks on the bachelor you’re going to love me and these muffins. they are so skinny. so you would be able to eat these the months prior to filming. now you’re asking yourself, what? court, how could a muffin be skinny? well you forget the whole flour and sugar part and poof, you’ve got yourself a skinny minnie muffin, so you can be skinny minnie for your stud muffin! 
since i just told you there’s no sugar in these (i should let you know, there is but it’s like a pinch per muffin, and it’s truvia) you have to go in knowing that they’re not going to be the sweetest. if you want a sweet muffin, go buy one of those enormous ones from costco that even have sugar on top! but these are still delicious, and now you’ll even be able to put a little bit of butter on them (again, i’m looking at you heather!) and not feel guilty. 
gosh, i’m like your best girl friend now! that is 2 skinny recipes from me in 1 month. y’all are all going to be so skinny by summer and you’ll even be able to squeeze in some fro yo with me before then! i feel like this is really going to work between us. bffs forever forever!!
stud muffin oatmeal blueberry muffins
2 super ripe bananas, smashed
2 eggs
1 cup skim milk
4 packs truvia
1 tsp vanilla extract
1 tbsp baking powder
1/2 tsp salt
3 cups oats (i used quick oats)
1 cup blueberries
preheat oven to 375 degrees. line muffin tin with 16 cupcake liners.
combine all ingredients except oats and blueberries in large bowl and mix. mix in oats and then fold in blueberries.
fill up muffin tins to the top, as the muffins will not rise much. bake for 20 – 25 minutes or until toothpick inserted into the middle comes out clean.
enjoy!
these muffins will go bad after about 5 days, so if you’re not going to eat them all, share them or pop them in the freezer so they don’t mold!
um, did anyone else feel super uncomfortable during the whole “longest on screen kiss”? oh my gosh, so awkward. lastly, ew tierra and daniella. ew.


At the risk of asking a silly question – are these regular size muffins?
hahaha, not a silly question! yes regular size muffins. don’t know if mr. picky himself, chris will love these, but i know a little chase man will!!
Awesome muffins!! I used Splenda instead of Truvia and they tasted fine, though I would try adding 6 packets next time. Frozen blueberries, thawed in a colander, worked well.
Simple but more importantly YUMMY. I subbed agave nectar for sweetness. Definitely making these again.
