i was recently reminded of an old throwback.
i call it tuna nunna casserole, most normal people call it tuna noodle casserole. baked spaghetti boy brought it up the other day and i had forgotten about it. usually the word casserole makes me want to die. it makes me think of a old lady walking over to her neighbor’s house in mom jeans and a themed sweater with two oven mitts on holding a retro dish. did i just describe myself? am i going to be that lady in 40 years? barf.
i remember my mom making it for my sister and me growing up and the best part about it, the recipe was out of a disney movie cookbook. which has since gone missing. i’m looking at you heather. each recipe was from a movie and was supposed to be something that characters in that movie ate, and tuna noodle casserole was what the poor people ate in robin hood!
funny thing about that, when i was first out of college and had about $1 in my bank account i use to make it all the time! those silly disney movies really know what they’re talking about. something about the fact that it cost $4 and would last me all week long made it even more delicious. 2 cans of tuna, 1 can of cream of mushroom soup, frozen peas, and noodles. stop it. back then that meant i would be able to pay my rent, today that means, well, i’ll be able to pay my rent! i promise you, one day i’m going to grow up, hold me to that!
baked spaghetti boy also had to throw in there that his moms make “the best” tuna noodle casserole. you know what i heard when he said that? another food competition. come on! you know i haven’t recovered from the last bake-off lost. plus side to this one, i’m only up against 2 ladies. down side, you know this judge is going to be super bias. uh, i’m never going to win.
on a more positive note, i love throwback thursday! any ideas for next week? i’ve got a couple but if any of you more mature readers (mom, dad, i’m talking to you. nicest way i could say old people) have oldie recipes i need to make, tell me!!
and speaking of dad, can everyone pa-lease hassle him on here to give me his old camera so my pictures stop looking like total dark and cheesy crap! he’s not even using it. it’s basically collecting dust on the kitchen counter.
ok thanks y’all!
revived tuna nunna casserole
2 cups egg noodles, uncooked
1 can cream of mushroom soup
1/2 cup milk
1 cup frozen peas
2 cans tuna, drained and flanked
1 tsp onion powder
1/4 tsp cayenne pepper
salt and pepper to taste
2 tbsp dry bread crumbs
2 tbsp butter, cubed
preheat oven to 400. spray 8×8 with non-stick spray, set aside. cook noodles 1-2 minutes less than package says.
meanwhile in large bowl mix soup, milk, peas, and tuna. once noodles are cooked and strained, mix with soup and tuna mix. add onion powder, cayenne pepper and salt and pepper, mix. pour into dish and bake for 20 min. remove and sprinkle bread crumbs and butter on top of casserole, put back in oven for 5 minutes.
